Tater Tot Casserole: An All American Meal

Kenny and I have been hooked on a yummy casserole lately.  It is a recipe that I discovered online then I added a few tweeks of my own and we can’t seem to get enough.  It is especially easy because it is almost a whole meal in one dish.  Just add some bread and maybe an extra side dish and you are set.

1-2 pounds ground beef (you can decide how much meat you like)

1 packet taco seasoning

1/2 C water

1  10.75oz can cream of mushroom soup

1 10.75oz can cream of chicken soup

1 12oz can evaporated milk

1 30oz bag frozen tater tots (I like crispy crowns)

1 15oz can corn (drained)

1-2 C shredded cheddar cheese

Preheat oven to 375 degrees.

Brown your ground beef in a large skillet.  Add taco seasoning and water and simmer on low until most of the water cooks away.  In the mean time whisk together the cream of chicken soup, cream of mushroom soup and evaporated milk until well mixed.

In a 9×13 casserole dish layer in the following: the cooked ground beef, cover that layer with corn, next cover that layer with the tater tots and top the whole thing with the soup/milk mixture.

Place the casserole in the oven and bake for forty-five minutes.

Top with shredded cheese and return to the oven for about five minutes or until the cheese is bubbly.
