Yesterday I did a Day in The Life post with me and my little dolly girl. We made my Father-in-law’s crockpot chili and I promised I’d try to share the recipe today. It is really so yummy and good. A nice level of spice and a good ratio of beans and ground beef. It is the perfect thing to have ready and waiting for you on a cold day. Try it out one of these days, you won’t be sorry.
Kenny HAS to have his with square saltine crackers and I love to top mine with shredded cheese and sour cream. We had leftovers this evening and it was just as good the second day!
1-2 lbs ground beef (browned)
2 cans red kidney beans (I use one dark and one light and drain and rinse them off)
1 can chili beans
1 can tomato soup
1/2 to 1 jar pace picante sauce (I use 2 medium jars)
chili seasoning mix
1 cup water
Just mix all the ingredients in your crock pot and set it to medium. It will heat and thicken and mingle all the flavors all day. You can leave it working it’s magic for the entire day or just a few hours and it will be ready to eat.
